We cure our BAM streaky bacon from pork belly. This has a higher fat content which makes it really, really tasty. Because of the hot smoking and air drying process we use this bacon you can cook to the ‘snap’ which is characteristic of American bacon.
We keep the rind, which crisps into crackling during cooking – a little strip of crispy crunchy heaven, right there…
Each packet contains 200g of our awesome bacon, which is usually about 5 or 6 rashers.
